Plus taco kits with swordfish and rock shrimp, loco moco, goat ribs with handmade tortillas, duck confit kibbeh, Argentine choripan, and some slow-and-low smoked meats. Yet here is Alex Stupak of Empellón in New York City, waxing poetic for Lucky Peach recently about his discovery of the cheeseburger taco while on a two-day trip to Mexico City. Here is Pour Vida Latin Flavor, doing their take on In-N-Out’s flavors, spread across a tortilla down in Orange County. Both well-meaning, eager to capitalize on what seems like a novel idea, and both with likely no idea whatsoever that Bill’s has been making cheeseburger tacos literally for generations.

The star of Lessons in Chemistry shares how her biggest setback, dropping out of a prestigious high school program, led her to pursue her love of acting. Dressed in a Vera Wang gown, the actress attends the premiere of her film, Challengers, at Regency Village Theatre on April 16 in Los Angeles, California. Much has been said and written about Tsujita, a ramen shop that originated in Tokyo and spawned several popular locations across Los Angeles and it's usually love at first slurp.

As I began exploring the city’s Black-owned restaurant scene as a food journalist, I noticed overlap between the tacos my mother made for my siblings and me at home and the ones offered at spots around town. Often, the same folded and fried tortilla shell was featured with ground beef or turkey, yellow cheese, shredded lettuce and tomatoes. Stopping at one of Roy Choi’s Kogi trucks is like getting schooled with the most delicious history lesson imaginable. You can trace L.A.’s food-truck movement back to the now-celebrity-chef and the 2008 launch of his very first rolling restaurant slinging Korean BBQ folded into soft corn tortillas.

In fact, as Times columnist Gustavo Arellano wrote in his book “Taco USA,” Mitla Cafe was the place that inspired Taco Bell founder Glen Bell to start the now-global chain. The menu still focuses on those cheeseburger tacos, wrapped in commercial tortillas lightly fried to give them an airiness and chewy texture. Ground beef patties are chopped and topped with American cheese, then the whole thing is layered off with shredded lettuce and slices of tomato. Near the beginning of this long and complicated ground beef taco history, there is Original Bill’s Taco House on Martin Luther King Jr. See, Original Bill’s Taco House makes a slight ground beef taco variation known simply as the cheeseburger taco, which is exactly what it sounds like in an “I can’t believe I don’t see this done everywhere” kind of way.

The actor attends the Los Angeles premiere of Poolman celebrating Chris Pine's directorial debut at Vista Theatre on April 24 in Los Angeles, California. With our friendly and accommodating customer service, top quality ingredients and intimate dine-in setting, Ernie’s Mexican Restaurant has set the industry standard and excellence when it comes to a family Mexican restaurant. If you want to experience the authenticity of Mexico, Ernie’s Mexican Restaurant offers all kinds of delicious authentic Mexican dishes. For over 65 years, Ernie’s Mexican Restaurant has become the go-to spot for mouthwatering Mexican food in the San Fernando Valley.

There is no active Instagram account or flowery profile in a high-gloss print magazine for Original Bill’s Taco House. Black and white photos on the wall show off patrons long gone, or images of Dr. Martin Luther King Jr., while the ancient sputtering jukebox at one end is as likely to play cumbia as it is country. This is what quiet, unpretentious community dining looks like outside of the food-obsessed Los Angeles bubble, even if the restaurant in question has been making one spectacularly unique food for almost seventy years. The actress attends the 2024 TriBeCa Ball at New York Academy of Art on April 1 in New York City. Lionel Richie, Lisa Parigi, Harlow Madden, Sparrow Madden, Nicole Richie, Brenda Harvey-Richie and Joel Madden attend the Los Angeles premiere of Don't Tell Mom the Babysitter's Dead at The Grove on April 2 in Los Angeles, California.

Times Food feature “How we made tacos a Black thing in L.A.,” published this week. Leo’s and Tamix steal the spotlight when it comes to al pastor, but Chiquis is the unsung hero of Mid-City. At $1.50 apiece, their tacos are a solid deal—especially considering the hefty portions of meat cut from the trompo. Also home to burritos, quesadillas, excellent birria, and an entire table crammed with plastic jugs of condiments, this electric-green truck’s got a little something for everyone. Food recalls reach highest level since the pandemic. Undeclared allergens are the biggest reason for the rise
A crunchy-yet-pillowy exterior, tender fish interior, bright slaw, tangy crema, chilled pico and a warm corn tortilla? If you’ve tracked down the Ricky’s Fish Tacos truck, you’ve found the platonic ideal of a fish taco. Ricky Piña fries whitefish to order, giving you the freshest Ensenada-style tacos around—and at $3.50 a pop and bursting with filling and flavor, they’re a great deal. Fish is the icon here, but the Ricky Special—half shrimp, half fish—is the move. The collaboration between chefs Hiroyuki Masato, Andy Juliady, Sebastian Karyadi, and Jeffry Undiarto (the former manager of two-Michelin-starred n/naka) offers modern updates on familiar classics.
The signature queso taco is instantly recognizable, built on a blue corn masa tortilla stacked with refried beans, onion, cilantro, guacamole, cotija cheese, crema and a melted skirt of Monterey Jack. Variations with asada and chorizo are favorites, with vegan options on offer as well. Colorful, messy and filling, these tacos thrive on their own but also sing with the homemade salsas, some of which are ferociously spicy. Ground beef tacos don’t earn a lot of love in hardcore Los Angeles dining circles. A widely bastardized sub-genre of the classic styles found across Mexico, ground meat tacos and burritos — the ones often piled high with shredded yellow cheese and chopped lettuce — are almost uniquely American.
Vegetarians and vegans often get left out of the ramen conversation, but that doesn’t need to be the case. If you’re downtown, Ramen Hood inside Grand Central Market is an excellent option for vegans and non-vegans alike. The least traditional bowl on the list, Ramen Hood’s broth is made by simmering shiitake mushrooms, kelp, white miso, and roasted sunflower seeds. Their chewy, slightly curly noodles were perfectly-cooked and satisfying to eat, but the real star ingredient was their treatment of oyster mushrooms. I’m not sure how they’re able to pack so much umami flavor into a king oyster mushroom, but they’re savory, complex, and deliciously meaty.
The long-simmered beef is tender enough, but before it gets served, each taco, quesadilla ($3.50), vampiro ($2.75) or mulita ($2.99) gets a scoop of the spicy broth, and it’s all fried on the plancha. Some taco trucks keep regular hours and locations, while others update their social media a mere hour before they pop up to let you know where they’ll be and when. It’s almost always worth pulling to the side of the road at midnight when you see one slinging tacos and mulitas from the window of their food trucks, but some are so good they’re worth tracking down as they roll through the city.
The co-stars hold hands at the Bridgerton season 3 launch on the grounds of Milton Park Country House on April 21 in Bowral, Australia. The actor poses at the opening night of Uncle Vanya on Broadway at The Vivian Beaumont at Lincoln Center Theater on April 24 in New York City.
